Thyme roasted beets

Serves 4

Tip: If you don't want to peel hot beets, you can peel and cut raw beets, toss with oil and seasonings and roast for about 25 minutes.

  1. Wrap 2 medium red beets in aluminum foil.
  2. Bake 40 minutes 400 F.
  3. Peel and cut into chunks.
  4. Add 1 tablespoon olive oil.
  5. Add 1 teaspoon ground black pepper.
  6. Add 1/4 teaspoon salt.
  7. Add 1 teaspoon fresh thyme.
  8. Place on a baking sheet.
  9. Roast 5 to 10 minutes until hot.
  10. Finish with 1 teaspoon of additional fresh thyme.
