Chicken cordon bleu

Serves 4

Tip: If you don't have spinach on hand, swap in broccoli, asparagus, green beans or sauteed kale.

  1. Add 1 cup panko bread crumbs.
  2. Add 1/2 teaspoon onion powder.
  3. Add 1/2 teaspoon garlic powder.
  4. Add 1 teaspoon chopped fresh parsley.
  5. Add 1/2 teaspoon kosher salt.
  6. Add 1/2 teaspoon paprika.
  7. Add 1/4 teaspoon ground black pepper.
  8. Add 1/2 cup egg substitute.
  9. Pound out 4-ounce chicken breasts to even thickness.
  10. Add 1/2 ounce Swiss cheese to each breast.
  11. Add 1/2 ounce Canadian bacon.
  12. Add 1/4 cup sauteed spinach.
  13. Coat with egg substitute
  14. Coat in bread crumb mixture.
  15. Bake 20 to 25 minutes at 400 F.
