Soba noodle stir-fry with coconut curry sauce

Serves 4

Tip: Using coconut milk and shredded coconut in this curry gives depth of flavor.

  1. Cook 4 ounces soba noodles according to package.
  2. Add 1 tablespoon sesame oil.
  3. Saute 1 pound boneless skinless chicken breast and set aside.
  4. Add 1 teaspoon olive oil.
  5. Add 2 cups chopped onions.
  6. Add 1 red bell pepper.
  7. Add 1 cup broccoli florets.
  8. Add 1 carrot.
  9. Saute until tender.
  10. Add chicken strips.
  11. Add 1/2 cup coconut milk.
  12. Add 1 cup vegetable or chicken stock.
  13. Add 1 teaspoon green curry paste.
  14. Add cooked noodles.
  15. Cook until sauce is slightly thickened.
  16. Add 1/2 cup shredded sweetened coconut.
