Baked hush puppies

Serves 12

Tip: This old-school favorite gets a healthy update with Greek yogurt and no frying.

  1. Add 1/2 teaspoon canola oil.
  2. Add 1/2 cup chopped onions.
  3. Saute until soft and tender.
  4. Add 1 cup all-purpose flour.
  5. Add 1 cup cornmeal.
  6. Add 2/3 cup nonfat plain Greek yogurt.
  7. Add 1/3 cup low-fat milk.
  8. Add 2 eggs.
  9. Add 1 tablespoon baking powder.
  10. Add 1 teaspoon kosher salt.
  11. Add 1 teaspoon sugar.
  12. Add 1/4 teaspoon cayenne pepper.
  13. Add cooked onions.
  14. Mix well until fairly thick.
  15. Place 1/4 cup into each muffin slot.
  16. Bake 18 to 22 minutes at 400 F.
