Apple cinnamon muffins

Serves 16

Tip: You can buy whole oats and flaxseeds and mill them at home in a food processor.

  1. Add 2 eggs.
  2. Add 1 cup nonfat plain Greek yogurt.
  3. Add 2 tablespoons canola oil.
  4. Add 2 teaspoons vanilla extract.
  5. Add 1 cup all-purpose flour.
  6. Add 1 cup sugar.
  7. Add 3/4 cup milled oats.
  8. Add 1/4 cup flaxseed meal.
  9. Add 2 teaspoons cinnamon.
  10. Add 1 1/2 teaspoons baking powder.
  11. Add 1/2 teaspoon salt.
  12. Slowly add dry ingredients to wet ones.
  13. Mix on low speed until combined.
  14. Fold in 2 medium Granny Smith apples.
  15. Scoop 1/4 cup batter into each muffin well.
  16. Add 2 tablespoons sugar.
  17. Add 1/4 teaspoon cinnamon.
  18. Sprinkle over batter in each muffin well.
  19. Bake for 22 minutes at 350 F.
