Coconut shrimp

Serves 6

Tip: You can use smaller shrimp. Just plan for less breading and less baking time.

  1. Add 1/4 cup sweetened coconut.
  2. Add 1/4 cup panko breadcrumbs.
  3. Add 1/2 teaspoon kosher salt.
  4. Process until even consistency.
  5. Place 1/2 cup coconut milk in another small bowl.
  6. Dip each shrimp in coconut milk and in panko mixture.
  7. Coat top of shrimp with cooking spray.
  8. Bake for 10 to 15 minutes at 375 F.
