Smoked Gouda and vegetable poached egg sandwich

Serves 6

Tip: You can roast peppers by placing them directly over a gas burner or grill for 5 to 10 minutes.

  1. Roast 2 bell peppers 10 to 15 minutes in oven or on grill.
  2. Cover peppers with plastic wrap.
  3. Remove the skin.
  4. Add 1 cup sliced onions.
  5. Cook for 6 minutes until caramelized.
  6. Arrange cooked onions on English muffins.
  7. Add roasted peppers.
  8. Add 3 ounces smoked Gouda cheese.
  9. Bake for 5 minutes at 425 F.
  10. Simmer 6 cups water.
  11. Add 1 tablespoon white vinegar.
  12. Add 6 large eggs, one at a time.
  13. Poach for 3 to 4 minutes.
  14. Top English muffins with poached eggs.
  15. Sprinkle 1/4 teaspoon kosher salt.
