What's for brunch? Try this caprese frittata

Looking for a little variety in your breakfast? Or maybe you want to impress the in-laws at your next family brunch?

Look no further.

Frittatas are a great addition to any breakfast table. And this caprese version, which features fresh tomatoes and basil, is as easy as it is delicious.

Here's what you need to know to add it to your menu.

What you'll need

2 tomatoes, sliced (globe or beefsteak tomatoes are great choices)
6 eggs + 2 cups egg whites
4 tablespoons chopped fresh basil (or 1 tablespoon dried basil)
1 tablespoon minced garlic
1⁄2 cup feta cheese crumbles
1 cup shredded mozzarella cheese
1⁄2 teaspoon kosher salt
1⁄4 teaspoon ground black pepper

How to make it

Start by preheating your oven to 375 F. Then lightly spray an ovenproof skillet or baking pan with cooking spray.

Place the eggs and egg whites in a mixing bowl and whisk them together. Gradually add the basil, garlic, cheeses, salt and pepper. (If you prefer, you can place the cheese on top of the frittata before baking instead.)

In your skillet or baking pan, combine the egg mixture and sliced tomatoes. Cover with parchment paper or foil and bake for about 20 minutes.

Check the frittata. If the egg mixture is fairly set, remove the foil and place the frittata back in the oven uncovered for about 5 minutes. When ready, cut into 6 pieces and serve.

Each slice of this frittata includes 200 calories, 10 g fat, 5 g saturated fat, 22 g protein, 4 g carbohydrates and 580 mg sodium.
