Corn pudding tastes great with just about anything grilled. This side dish also satisfies your sweet tooth — no need to make dessert.

Ingredients

  1. 3 cups water
  2. 3 cups skim milk
  3. 2 cups coarse cornmeal or polenta
  4. 1/4 cup maple syrup
  5. 1/4 teaspoon cinnamon
  6. 1/8 teaspoon nutmeg
  7. 1/8 teaspoon clove
  8. 1/8 teaspoon ginger
  9. 1/2 cup raisins

Directions

In a saucepan, bring water and milk to a boil. Add cornmeal or polenta and stir to remove lumps. Bring back to a boil. Then turn heat to low and cover. Stir occasionally for 10 to 15 minutes.

Shut off heat and stir in remaining ingredients. Let pudding rest for 10 to 15 minutes. Stir and serve.
