A healthy diet doesn't have to mean skipping dessert. Try this healthy but sweet option. Place 1 cup water, 1/2 cup sugar, and 1 vanilla bean split and scraped into a saucepan. Stir the mixture over low heat until the sugar dissolves. Simmer until the mixture thickens, about 10 minutes. Add 4 large peaches, pitted and quartered. Poach over low heat for about 5 minutes. Transfer the peaches into small, decorative bowls. Garnish with mint leaves or a dusting of cinnamon.
